I am looking to set up a custom connector for HappyReturns webhooks. Has anyone done this before?

Have you looked into the JSON Webook connector? That would be an easier solution than creating a custom connector.

Thanks Mark! I am new to API's, trying to learn everything I can. If I use the JSON Webhook connector, do I use a tool like Postman to create the Subscription with the URL provided in the connector?
