Add backfill configuration for Activity logs report in Remote DomoStats (observability metrics)

Currently, the Activity Logs report in Remote DomoStats (observability metrics) has a default backfill period of 14 days, reduced from the previous 180 days.

There might be some issues with jobs or accounts, particularly if jobs do not run for more than 14 days, resulting in data gaps. Additionally, the initial run requires a more extensive backfill, ideally covering at least the last 180 days as before.

To address this, it would be ideal to have configurable backfill parameters that can be adjusted via the UI or API for each job. This flexibility would enable better management of backfill processes and help fill any data gaps as needed.
