When creating the database, I would like to store only the date. What is the syntax for doing this?

Casting usually works fairly well for true Datetime columns.
http://docs.aws.amazon.com/redshift/latest/dg/r_CAST_function.html
Example:
Cast("Datetime Column" as Date)

In Redshift there is a function called TRUNC that strips the timestamp:

Using the TRUNC function has been the best solution in my experince for this.
